Craftaholics Anonymous: Pumpkin Fudge

hi there! my name is linda and i'm a craft addict. for real.... the hubs had a mini intervention which prompted me to start Craftaholics Anonymous! Craftaholics Anonymous is a place chock full of free tutorials, crafty inspiration, and DIY projects. {its a crafters paradise on the web :}
 
anyways, i'm so glad amanda asked me to be a part of this fun celebration! fall is a lovely time of year, isn't it? so many yummy foods and crafts....what's not to love?? well today i'm going to make you drool a little bit. {fair warning haha} check out this de*licious..............................Pumpkin Fudge!!!!
 

when i first heard the name of this recipe, i was like, 'pumpkin and fudge go together? huh!?' the answer is a big, YES! this is one of those lick-the-pan-clean-because-it-is-so-good recipes! i got this AMAZING recipe from my mom, who is a much better cook than myself.
{which doesn't take much, i won't lie}
 
i would describe this recipe as a rich, creamy pumpkin pie that melts in your mouth {minus all the baking}, that you can eat with your fingers. ummm, you can't beat that! this recipe whips up in about 15 minutes.{and for a gal challenged in the kitchen scene, if i can handle it, so can you!!}
Pumpkin Fudge
1 1/2 cups sugar
1/2 cup canned pumpkin
1/2 tsp salt
2/3 cup milk
2 Tablespoon butter
1 1/2 teaspoon pumpkin pie spice
1 12 oz package vanilla baking chips
2 cups mini marshmallows
1 1/4 teaspoon vanilla
 
Line an 8x8 inch pan with foil, with the foil longer than the pan, spray the foil with non stick spray.
In a heavy pan, combine the sugar, milk, pumpkin, butter, salt and pumpkin pie spice. Stirring constantly over medium heat, bring the mixture to a boil, and boil for 12 min. Remove from heat, and stir in vanilla, marshmallows, and vanilla chips, until smooth. Pour into the foil lined pan. Cover and refrigerate until set.
Dump set up candy onto cutting board. Lift foil off, and cut and enjoy!!
(double batch fills a regular cake pan)

Oh sheesh, that looks so dang yummy! I've never had pumpkin fudge before, so I think I'd better try it. ;)
