Chicken and Rice Dinner

Today I wanted to share one of our favorite dinners with you! It’s called “Chicken and Rice” and it is totally delish!

Chicken and Rice Dinner
(This is for a 9x9 casserole dish)

1 heaping cup diced celery
1/8 cup diced onion
1 large chicken breast
1 can cream of mushroom
1 can milk
3/4 cup uncooked rice (approximately)
salt & pepper

Spray your casserole dish with Pam and then add a thin (1/8th inch) layer of rice to the entire bottom of the pan. Dice up your celery and onion and sauté then in a pan until they are tender. Add your can of cream of mushroom and can of milk and warm up – pour your entire mixture over the rice. I usually mix the rice into the mixture a little bit – add your chicken to the top. I usually dice my chicken up in quarter size pieces. Sprinkle salt and pepper over the top. Cover with tin foil and bake at 350 for 1 hour.

If you are making a bigger pan just double/triple the recipe. It is really easy and you can add a little more or less depending on your family. Also, when I make it for more then just my little family – instead of cutting up the chicken I will add a few chicken breasts to the top so everyone can have a whole breast with the rice on the side – either way, it is so yummy!!

my mom used to make a dish similar to this, except it was with pork chops. I bet it is good with chicken! and I bet I could make it in the crock pot too. Thanks.
