Super Easy Macaroni Salad

How was your Easter Weekend? We headed South for the weekend and spent time in the warmer weather celebrating with family.We went to a super fun egg hunt, dyed our own eggs, had great food and even squeezed in a little bit of shopping! But now the fun weekend is over and I know we are all asking the same question -

What on earth am I going to do with all these hard-boiled Easter Eggs??

Well… I have a super yummy Macaroni Salad Recipe to share with you today that can help you get rid of some of them!

This is one of my favorite spring and summer salads – I wait and wait from Labor Day to Easter to make it!!

*note: This salad is sort of a “make it how you like it” recipe – So if you want to add more or less of an ingredient – go for it! These are the approximate measurements that I use to make a big bowl!


1 1/2 pounds (uncooked in box) of Elbow Macaroni cooked
6 –8 hard boiled eggs
6 stalks of celery diced up
1/4 cup of white onion diced up
Medium can of sliced black olives
Small jar of sweet pickles – diced up
1 cup Mayo and 1/4 Cup Mustard (dressing)
1 TBL Dill Weed
Salt and Pepper to taste

Throw it all in a bowl and mix with a  big spoon!
The dressing will soak into the noodles so if you want your macaroni salad a bit creamier you will want to add more dressing.
I like to let it refrigerate for a little bit and let all the flavors mix together! It is best served cold!


This will be huge hit at all your fun parties this year!!

sounds so yummy! i've been looking for a good macaroni salad recipe =) i will try this soon =) except i will sub in dill pickles for the sweet pickles....we're not sweet pickle fans here....=)
