How was your Easter Weekend? We headed South for the weekend and spent time in the warmer weather celebrating with family. We went to a super fun egg hunt, dyed our own eggs, had great food and even squeezed in a little bit of shopping! But now the fun weekend is over and I know we are all asking the same question -
What on earth am I going to do with all these hard-boiled Easter Eggs??
Well… I have a super yummy Macaroni Salad Recipe to share with you today that can help you get rid of some of them!
This is one of my favorite spring and summer salads – I wait and wait from Labor Day to Easter to make it!!
*note: This salad is sort of a “make it how you like it” recipe – So if you want to add more or less of an ingredient – go for it! These are the approximate measurements that I use to make a big bowl!
1 1/2 pounds (uncooked in box) of Elbow Macaroni cooked
6 –8 hard boiled eggs
6 stalks of celery diced up
1/4 cup of white onion diced up
Medium can of sliced black olives
Small jar of sweet pickles – diced up
1 cup Mayo and 1/4 Cup Mustard (dressing)
1 TBL Dill Weed
Salt and Pepper to taste
Throw it all in a bowl and mix with a big spoon!
The dressing will soak into the noodles so if you want your macaroni salad a bit creamier you will want to add more dressing.
I like to let it refrigerate for a little bit and let all the flavors mix together! It is best served cold!
This will be huge hit at all your fun parties this year!!
Now I am off to go dish myself up a bowl!
