{White} Chicken Enchiladas

Usually when people think about enchiladas they think of their favorite Mexican restaurant – cheese, chicken or beef wrapped in a corn tortilla and smothered in some sort of a red sauce….

But when I think of enchiladas – I think of these homemade chicken enchiladas smothered in a white creamy sauce!

These are my very favorite enchiladas of all time! They are awesome and taste amazing! My mom has been making these for years and passed the recipe down to me and I thought it would be fun to share it – plus, if you are anything like me, you are always looking for yummy dinner ideas!

{White} Chicken Enchilada Recipe

1-2 large chicken breasts (shredded)
1 can green chilies
1 can cream of chicken
16 oz sour cream
1/3 cup onion
1 (cream of chicken) can of milk
1 cup colby jack cheese
Flour tortillas

Mix chilies, cream of chicken, sour cream, onion, milk and cheese in a bowl.
Shred your chicken.
Fill your tortilla with chicken and the cream mixture. I like to use medium tortillas because they fit the pan better. I do about a 1/4 cup of chicken with about a 2/3 cup of sauce – but really I just guess and fill them up how I want too!  Then I roll them up and place them in a pan with the seam/open side down. This will make about 6 enchiladas. Pour your extra sauce over the top and you are done!

Bake them for 1 hour at 350 and enjoy!

Ha, I have a tutorial for this as well that is in my scheduled posts. I think mine varies slightly from yours but these recipe is THE best!
